  • 2 medium potatoes
  • 2-3 medium carrots
  • 1 zucchini
  • 1 eggplant
  • 2-3 red peppers
  • 2 canned tomatoes in the broth
  • 1 canned pea + corn mixture
  • 1 canned red beans
  • 3 tablespoons olive oil
  • salt
  • pepper

  1. Peel all the vegetables and cut them into cubes or slices.
  2. Mix the carrots and potatoes in an oven tray, add a little oil and water and mix the vegetables well.
  3. Sprinkle with salt and pepper and put the tray in the oven for 15-20 minutes, covered with aluminum foil.
  4. After this time, take the tray out of the oven, remove the aluminum foil and add the rest of the ingredients, but without the tomatoes and the parsley.
  5. Mix the ingredients, cover the tray again, and bake for another 10-15 minutes.
