- 3 cups riced cauliflower
- 1 1/2 tablespoons olive oil (or unsalted butter)
- 1 onion
- 1/2 cup carrots
- 1 red pepper
- 2 cloves garlic
- Salt and pepper
- 1 juiced from a lemon
- 1/2 cup fresh parsley
- To make cauliflower rice, unwrap the cauliflower flowers and put them in a blender to grind for a few seconds. It is ready when the cauliflower is the size of rice grains.
- In a large skillet, add the oil and sauté the chopped onion and bell pepper. Stir constantly. Add the grated carrot and garlic and simmer for another 2 minutes. Add the spices, lemon juice, mix well, then add the cauliflower.
- Leave it on the fire for a few minutes, until the cauliflower warms up and slightly softens. Cut the parsley into small pieces and sprinkle over the cauliflower.
