Oriental eggplant salad, also called baba ganoush, is very often eaten in restaurants and popular in the Mediterranean and Middle Eastern cuisine. It is a light food, but full of flavors and extremely tasty. It can be easily prepared at home, from just a few main ingredients. Below we tell you how to prepare baba ganoush step by step.
The main ingredient that should not be missing from baba ganoush salad is ripe eggplant, which gives the smoky and aromatic taste of the recipe. It is commonly known to have tahini as an ingredient, but you can make baba ganoush without it.

Ingredients
- 2 large eggplants
- 2 tablespoons olive oil
- 3 tablespoons sesame paste
- 2 garlic cloves
- 1 the juice from 1 lemon
- Parsley
- Salt
- Pepper
Steps
- Wash the eggplants and cut them in half. Bake the eggplant halves, greased with oil on the inside. Bake the eggplant for 40 minutes and then let cool for another 15 minutes. Using a teaspoon, remove the baked core from each half of the eggplant. Crush with a fork or chopper/blender.
- In a large bowl add the ripe eggplant and the rest of the ingredients: sesame paste, lemon juice, crushed garlic, salt and pepper, and 2 tablespoons of oil. Mix well until you get a homogeneous paste. Allow natural cooling to room temperature.
- Sprinkle a little olive oil or sesame oil and pepper on top. Baba ganoush can be eaten plain or with fresh parsley and pomegranate seeds on top.
